What do I do if I think my property is overvalued by the Assessor?

You can file an overvaluation abatement application. Check your property for accuracy: for example, do we have the correct number of bathrooms, fire places, kitchens, etc. You are appealing your assessment, not your taxes. You must pay your taxes pending your appeal.
